DIET DISH FOR FRIED POTATO
LOVERS
 
3-4 sm. new potatoes
1 tbsp. canola, sunflower, or safflower oil
1 handful fresh parsley
Fresh ground black pepper

Outstanding dish, using YUKON GOLD yellow potatoes!

Above is for 1 person, multiply by number to be serving.

Wash potatoes, slice 1/8 inch thick, chop parsley fine. Put potatoes in stainless, ceramic, or glass roasting dish; add chopped parsley, pepper, and oil; mix.

Roast 1 hour at 375 degrees, stirring several times after first 20 minutes or continue baking until golden brown.

Serve hot. Like cottage fries, without all the badies. Some may wish to add salt.

NOTE: We have made in Dutch oven, with charcoal for heat on float trip - very hearty, with baked fish or steak.
