VEGETABLE SPREAD 
1 med. to lg. green pepper, very finely chopped
3 ribs celery, very finely chopped
1 lg. cucumber, very finely chopped
1 lg. onion, very finely chopped
4 med. to lg. carrots, grated
3 tsp. salt
4 c. mayonnaise
Generous dash of Tabasco sauce
2 envelopes unflavored gelatin
5 tbsp. water

Dissolve gelatin in water in double boiler (do not place directly on heat). Add all other ingredients and blend well. Refrigerate. Serve chilled with crackers or toast. (Lasts indefinitely, better made 24 or more hours ahead.)
