SHRIMP CREOLE 
1/4 lb. butter
1 c. chopped onions
1 c. diced shallots
1 c. tomato puree or 2 tbsp. tomato paste
1 oz. lemon juice
2 oz. cornstarch
1 c. chopped green pepper
1 c. diced celery
2 c. chopped canned tomatoes
2 bay leaves
3 lbs. peeled and deveined shrimp
Salt, pepper, and cayenne pepper

Melt butter; saute pepper, onions, celery, and shallots for 5 minutes; add tomato puree or paste, and bay leaves. Simmer 15 minutes. Add shrimp and simmer 15 minutes. Dissolve cornstarch in 1 pint water. Add and simmer 5 minutes. Add lemon juice, salt, and pepper to taste. Add pinch of cayenne and simmer for 15 minutes. Serve over hot rice or creamed potatoes. Serves 8.
