CORN FRITTERS 
1 c. sifted flour
2 eggs
1 tsp. salt
1 1/2 c. cooked whole kernel corn
1/4 c. milk
1 tsp. baking powder
Crisco for deep frying

(I use creamed corn as it makes flatter fritters.)

Combine: flour, salt and baking powder. Beat eggs with milk. Add 1 tablespoon melted Crisco and the corn. Combine two mixtures lightly. Drop from a teaspoon into deep Crisco heated to 365 degrees. Fry until brown and cooked in center, (about 3-4 minutes.) Drain on paper towel. (I fry as pancakes with syrup for lunch!)
