POST FRUIT & FIBER CEREAL PEACH
COFFEE CAKE
 
1 c. all-purpose flour
1 c. firmly packed brown sugar
1 1/2 tsp. Calumet baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
1/2 c. butter
2 c. Post Fruit & Fiber Cereal
1/2 c. milk
1 egg, beaten

Combine flour, sugar, baking powder, cinnamon and salt in a bowl. Cut in butter until mixture is crumbly. Add 1 1/2 cups of the cereal. Measure 1/3 cup of the mixture and set aside. Add milk and egg to remaining flour mixture and blend thoroughly. Pour into greased and floured 8" square pan. Mix measured crumb mixture with remaining cereal and sprinkle over batter. Bake at 350 degrees for 35 to 40 minutes. Serve warm.
