Sweet Cheese Ball

Have made this a few times now for work potlucks and always get a lot of appreciation from co-workers. I skip the nuts and use plenty of mini chips to roll it in. I find freezing it makes it too hard to roll into a ball, so I just chill it overnight and then it's pliable. I have served it with graham crackers, shortbread cookies and cinnamon Ritz crackers...people seem to like the Ritz best. Makes it a little less sweet altogether. This makes a big cheese ball, plenty to go around.

Great cheese ball however I eliminated the nuts and rolled the cheese ball in white chocolate chips. Purely my preference but wanted to put it out there. I agree also with the previous comment, chilling in the fridge was far easier than freezing over night.
