POOR MAN'S COOKIES | |
2 c. light brown sugar 1 c. butter 2 tsp. baking powder 1 big (heaping) tsp. ginger 1 tsp. baking soda -- dissolved in 1 c. lukewarm water Flour to mix & roll (until dough handles well) Cream together sugar and butter. Have baking powder, ginger and about three cups of flour in sifter. Add soda and water to butter/sugar mixture, then add mixture in sifter. These can be rolled very thin, and cut in fancy shapes, then iced with a thin mixture of powdered sugar, cream and vanilla. Use any favorite recipe for the icing. No temperature was given originally; but use one given for sugar cookies - probably 375 degrees. Since the cookies are very thin, they need to be watched carefully. |
