SWISS BAKED EGGS 
1 c. Velveeta cheese, cubed
1/2 c. half & half
2 tbsp. butter
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. prepared mustard
6 eggs

Butter a small casserole dish or 8 inch square glass baking dish. Put 1 cup cubed Velveeta cheese on bottom. Dot 2 tablespoons butter over cheese. Combine 1/2 cup half & half, 1/2 teaspoon salt, pepper, and 1 teaspoon prepared mustard. Pour 1/2 of cream mixture over cheese. Beat 6 eggs. Pour over top. Add the rest of the cream mixture. Bake 30 minutes at 350 degrees. Serves 4.

Note: Recipe may be doubled for a brunch. Use a 12 x 7 1/2 inch glass pan.
