PICKLED BEETS 
2 c. sugar
2 c. vinegar
Cinnamon sticks
2 c. water
Whole cloves
Sm. young beets

Make a syrup of the sugar, water, and vinegar. Select small young beets. (Medium size beets may be quartered.) Wash. Cook until tender. Dip in cold water to peel skins. Put beets, a cinnamon stick, and 1/2 teaspoon of whole cloves in each jar. Cover with the hot syrup. Seal and process for 30 minutes in a boiling water bath.
