6 boneless breasts, skinless Cover in salted water for 15 minutes; drain and dredge in 1 1/2 cups seasoned bread crumbs. Place into baking dish (9x11 inches) sprayed with non-stick cooking spray. 2 lg. onions, sliced 2 lg. potatoes, each cut into 8 lengthwise slices, sprayed with non-stick cooking spray Arrange all items in baking dish with chicken. Sprinkle with salt, pepper, basil and oregano. Bake at 325 degrees until done (approximately 1 hour). Makes 4-6 servings. |
