ALPINE ASPARAGUS QUICHE 
1 unbaked 9 inch pie shell
3/4 c. milk
3/4 c. half and half
1/2 c. finely chopped onion
1 tsp. salt
1/4 tsp. nutmeg
Dash pepper
3 eggs, slightly beaten
1 c. shredded Swiss cheese
1 (10 oz.) pkg. frozen asparagus spears

Bake pie shell at 400 degrees for 8-10 minutes. Prepare asparagus as directed on package. Drain. Combine milk, cream, onion, salt, pepper, and nutmeg, in saucepan. Bring to a boil then simmer a minute. Stir hot mixture into eggs, sprinkle 2/3 of cheese into partially baked pie shell. Arrange asparagus over cheese, trimming spears if necessary. Pour in egg mixture. Sprinkle remaining cheese over top. Bake at 375 degrees for 20-25 minutes or until knife comes out clean.
