DUTCH APPLE CAKE WITH CINNAMON
CREAM
 
2 cups sifted all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
6 tbsp. shortening
1 egg
2/3 cup milk
3 apples
4 tbsp. (1/2 stick) melted butter
1/4 cup light brown sugar
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg

Sift flour, baking powder, salt and sugar together. Cut in shortening.

Beat egg and add to milk and stir into dry ingredients. Spread in greased baking dish (10x8x2-inch).

Peel and core apples; cut in wedge-shaped slices about 1/4-inch thick; place in rows on batter.

Pour the melted butter over apples and sprinkle with mixture of brown sugar and spices.

Bake in moderately hot oven (425°F.) for 30 to 40 minutes, or until apples are done. Serve hot with Cinnamon Cream (see below).

Serves 6 to 8.

CINNAMON CREAM:

1/2 cup whipping cream
1/2 tsp. ground cinnamon
2 tsp. confectioners' sugar

Whip cream until stiff. Add cinnamon and sugar.
