CREAMED POTATOES 
5 lbs. potatoes, boiled in skins
1 pt. heavy cream
Beef grease (rendered beef fat)
Onion salt
Pepper

Boil potatoes in skins. Peel and cut into small cubes. Place in large roasting pan which has been dotted with the beef grease.

Sprinkle pepper, onion salt and dots of grease over the top of the potatoes. Bake at 375 degrees until the edges of cubes are browned.

Pour heavy cream over all the potatoes and bake an additional 10 minutes (or until cream bubbles).
