SPAETZLE (NOODLES) 
3 c. flour
1 tsp. salt
1/4 tsp. nutmeg
4 beaten eggs
1/2 c. water (or more)
1/4 c. butter (opt.)

Sift flour, salt and nutmeg together in bowl. Pour eggs and 1/4 cup water in middle of flour mixture. Beat with wooden spoon. Add enough water to make dough slightly sticky, keeping it elastic and thick.

Using a spaetzle machine or colander with medium holes, press noodles into a large pot full of boiling, salted water. Cook noodles about 5 minutes or until they rise to the surface. Lift noodles out with strainer and drain in colander or on paper towels.

Optional: Brown noodles in butter over low heat. Makes 4 to 5 servings.
