HOMEMADE PIMENTO CHEESE 
1/2 lb. Cheddar cheese
1 sm. can evaporated milk
1 sm. can pimento
1 tsp. sugar
1 tsp. vinegar
1/2 tsp. salt
1 tbsp. mayonnaise

Chop pimento, cut cheese in small pieces. Put in top of double boiler and add remaining ingredients. Cook at low temperature and mix well until cheese is dissolved and smooth.

NO way is this Pimento Cheese. Pimento cheese is never ever cooked! It should be cold and the cheese should be grated, the texture is a lumpy deliciousness!

Perhaps this is the Pimento Cheese Spread like in the tiny glass jars. I remember them and this sounds like it would be like that...smooth and spreadable.
