VIRGINIA CRAB CAKES | |
1 lb. crabmeat 1 heel bread 2 tbsp. butter, melted 2 eggs, slightly beaten 2 tsp. mayonnaise 2 tsp. mustard Break bread into the crabmeat and toss lightly. Mix the other ingredients and lightly fold them into the crabmeat mixture with a fork. Shape into patties with a fork and spoon. Place on a floured platter and dust the tops with flour to hold them together. Brown quickly on each side in a small amount of hot fat. Cover and steam cook for 3 minutes. Drain on paper towels. Serve 6 to 8. Note: Backfin meat is best. |
