MARYLAND CRAB CAKES 
1 lb. crab meat
2 slices stale bread, top crusts removed
1 egg
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. parsley flakes
1 tsp. Worcestershire sauce
1/3 stick butter

Place crab meat in a bowl and remove shells. Soak the bread in water; squeeze lightly to remove excess water. Add this and all other ingredients to crab meat. Mix well, tossing lightly.

Form into crab cakes. Then refrigerate for 1 hour. The crab cakes will be firmer and easier to fry. Fry in hot shortening (not deep) until golden brown on both sides or broil on both sides. Makes about 12 medium size cakes.
