STIR - FRY CHICKEN AND
VEGETABLES
 
1/4 c. oil
1 lb. chicken breast, skinned, boned & thinly sliced
1 med. onion, quartered
1 clove garlic, minced
1 lb. broccoli, trimmed, cut up
1/2 lb. mushrooms, sliced
2 tbsp. soy sauce
1/2 tsp. ground ginger
1 tbsp. cornstarch
3/4 c. cool chicken bouillon

In medium skillet or wok, heat oil over medium heat. Add chicken and stir fry over medium-high heat 4 minutes or until white. Remove. Add onion to skillet; stir fry 1 minute. Add garlic; stir fry 30 seconds. Add broccoli, stir fry 2 minutes. Add mushrooms; stir fry 1 minute. Return chicken to skillet. Add soy sauce and ginger.

Mix cornstarch and bouillon; add to skillet. Stirring constantly, bring to boil over medium heat and boil 1 minute. Yield 4 servings.
