DARK RAISIN BRAN MUFFINS | |
1 1/2 c. unprocessed bran 1 1/4 c. milk 1 1/2 c. unsifted flour 1 tbsp. baking powder 1 tsp. salt 1/3 c. sugar 1 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/4 tsp. ground cloves 1 stick butter 1/4 c. light molasses 1 lg. egg 1/2 c. dark raisins 1. Heat oven to 400 degrees F. Grease 12 muffin cups. 2. In a bowl, combine the bran and milk, stir to moisten bran and let stand 10 minutes. 3. Combine dry ingredients and blend well. 4. Melt butter. Remove from heat and stir in molasses; when well blended, stir in egg. 5. Add butter mixture to soaked bran and blend. Add to dry ingredients and beat well. Stir in raisins. 6. Spoon into 12 muffin cups and bake 15-20 minutes or until a toothpick inserted in center comes out clean. |
