Vanilla wafers
1 lb. cream cheese
3/4 c. sugar
2 lg. eggs
1 tsp. vanilla

Put cup cake liner in cup cake pan. Place 1 vanilla wafer on bottom of liner. Whip together cream cheese, sugar, eggs and vanilla. Fill the cup cake liners 3/4 full of mixture. Bake at 375 degrees for 10 to 15 minutes. Cool and top with blueberry or cherry pie filling. Be creative. This recipe may be made ahead and frozen before putting filling on top. This recipe can also be made with substitutes. eg. non-fat cream cheese (whipped non-fat cottage cheese), sugar substitutes, egg substitutes, no cholesterol vanilla wafers.
