GERMAN STYLE APPLE CRUMB CAKE 
1 1/2 c. sifted flour
1/2 c. sugar
1/2 c. butter, softened
5 c. tart apples, peeled & thinly sliced
2 tbsp. quick cooking tapioca
1/2 c. sugar
3/4 tsp. cinnamon
1/4 tsp. nutmeg

Combine flour, 1/2 cup sugar, salt and butter. Mix well with a pastry blender until crumbly. Measure out 3/4 cup of the crumbs and set aside. Press remaining crumbs into 9" spring form pan, covering bottom and about 3/4" up the sides. Mix apples, tapioca, sugar and spices. Arrange in shell. Bake in 425 degree oven for 20 minutes, then sprinkle with remaining crumbs. Bake an additional 20 to 25 minutes or until golden brown. Serve warm or cold.
