RED BEANS WITH GRAVY AND PARSLEY | |
I got this recipe from my fiance's grandmother, and I love it. It's the only way I do beans now. 1 lb. dry red kidney beans 1 medium onion, chopped 1/2 lb. smoked sausage or ham bone 2 tbsp. parsley salt, to taste water (enough to cover) GRAVY: 1/4 cup vegetable oil 1/4 cup all-purpose flour 1-2 cups water (adjust as necessary) Combine beans, onion, sausage or ham bone. Add enough water to cover by 2 inches. Bring to a boil then add about a tablespoon of salt. Cook until beans are done, about 2 hours. If you use a ham bone you can remove it at this point. In a large skillet add oil and let it get hot, add flour and stir. Let the flour get brown and then add water, just enough where it is still thick and not runny. Add gravy to your pot of beans. Chop a couple tablespoons parsley and add this to the beans also. Serve with some freshly steamed rice and cornbread and you've got yourself a delicious meal. I hope y'all enjoy!
