20-MINUTE CHICKEN PENNE WITH
ALFREDO SAUCE
 
1 regular size box penne noodles
2 medium size chicken breasts
1/2 cup butter
1 8oz. package cream cheese
1/3 cup shredded or grated Parmesan cheese
1 cup half and half

Cook one box of penne noodles as per directions on box; drain.

While noodles are cooking, dice two medium size chicken breasts and fry in small frying pan until cooked all the way through. Once chicken and penne is cooked, work on the Alfredo sauce.

Alfredo Sauce:

Melt butter in medium saucepan. Add cream cheese and stir until mostly combined. Add half and half and Parmesan cheese; stir. Remove from heat and let thicken (1-2 minutes).

Combine chicken, penne noodles, and Alfredo sauce in the same saucepan you cooked the noodles in and viola! 20 minute dinner that tastes better than Applebees!

(I like to add two small chopped tomatoes too--if you do this and like your tomatoes to remain crisp, add them after the Alfredo sauce has been mixed in with the noodles and chicken).

Just finished making this it was pretty good, however there is a much better why to make the sauce. But for a 20min meal not bad. I did tweek it a bit added onion while cooking seasoned the chicken, added garlic and pepper to the sauce, and used leftover cheese on top and broiled in oven for 6min.

It takes longer to boil the noodles than it does to make this sauce. The method is fool proof and the sauce comes out perfect every time. I start off by sautéing the chicken in garlic, and then add mushrooms. Sometimes I mix in some sautéed broccoli as well. Everyone that I have made this for says it's better than any restaurant they have been to.

As per other comments - this is above restaurant quality! I used Pecorino Romano instead of Parmesan. This is actually so rich - you do not even need the chicken. It could just be used as a side dish. Recipe is definitely a keeper and one to add to my regular listings. Thanks for sharing...

I made this tonight and it was awesome! I sauteed the chicken with garlic and mushrooms. I added ground sea salt and ground pepper to the sauce and let it cool before adding the pasta.

Suggestion: At last 4 min of cooking pasta, add fresh cup broccoli flowerets to the boiling pasta water. Drain in colander and mix to distribute broccoli. Also find that cooked pasta that is going to be baked in the oven should be cooked 3 minutes less than the package direction. This helps avoid mushy pasta.
