APRICOT DESSERT 
2 tbsp. cornstarch
1/4 c. almond milk
2 c. apricot nectar
1/2 tsp. vanilla
1/4 c. currants or cut up dried apricots
1/4 c. coarsely chopped pistachio or almond nuts

Dissolve cornstarch in the almond milk. Bring apricot nectar and vanilla to a boil. Add the cornstarch and milk mixture, stirring constantly and let boil for one minute. Let cool slightly and stir in currants or apricots and nuts. Pour into serving dish or individual dessert dishes and chill. Decorate with nuts (chopped almond, pistachio or pine nuts). Serve with thick almond milk.
