LOW SUGAR PUMPKIN PIE 
2 pkg. (4 oz. each) sugar free instant vanilla pudding
2 c. minus 1 tbsp. cold low fat milk
1 c. canned pumpkin
1/4 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. cinnamon
1 c. sugar free whipped topping

Mix pudding, milk, pumpkin and spices in large bowl of electric mixer. Beat on low speed for 1 minute. Pour into a baked pie shell and chill. Serve with whipped topping if desired.
