PERFECT PASTA SALAD 
1 (8 oz.) pkg. linguini or spaghetti (fresh)
1 (10 oz.) bag spinach
4 oz. thinly sliced prosciutto
2 lg. carrots
2 med. sized yellow peppers
1/2 c. grated Parmesan cheese
1/4 c. olive or salad oil
1/4 c. red wine vinegar
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried oregano leaves

About 40 minutes before serving: prepare linguini or spaghetti as label directs; drain.

Meanwhile, wash and drain spinach, thinly slice. Cut prosciutto into long thin strips. Cut carrots and peppers into matchstick thin strips. In large bowl, toss vegetables and prosciutto with cooked pasta, Parmesan cheese, olive or salad oil, vinegar, salt, pepper and oregano. Makes 6 main dish servings.

Each serving: about 330 calories, 15 g fat, 17 mg cholesterol, 600 mg sodium.
