PERFECT PASTA SALAD 
8 oz. pkg. linguine or spaghetti
10 oz. bag spinach
4 oz. prosciutto (thinly sliced)
2 lg. carrots
2 med. yellow peppers
1/2 c. grated Parmesan
1/4 c. olive oil or salad oil
1/4 c. red wine vinegar
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried oregano leaves

Prepare linguine or spaghetti as label directs; drain. Meanwhile, wash and drain spinach; thinly slice. Cut prosciutto into long strips. Cut carrots and peppers into matchstick-thin strips. In large bowl, toss vegetables and prosciutto with cooked pasta, Parmesan cheese, olive or salad oil, vinegar, salt, pepper and oregano. Makes 6 main dish servings.
