SUMMER LINGUINE WITH FRESH
TOMATO SAUCE & BRIE
 
4 lg. ripe tomatoes, peeled, seeded, cubed
1 lb. Brie, peeled & cubed (Mozzarella = less rich)
1 c. fresh basil leaves, coarsely chopped
3 garlic cloves, pressed
2 tsp. salt, divided
1 c. + 1 tbsp. olive or other oil
1/2 tsp. pepper
1 1/2 lb. linguine
1/3 c. Parmesan cheese

MARINATE: tomatoes, brie, basil, garlic, 1 cup oil, 1/2 teaspoon salt, pepper. Mix and let stand 2 hours.

In large pot: 6 quarts water, 1 tablespoon oil, salt, linguine and cook according to directions. Toss with marinade and Parmesan on top. Serves 8.
