CHEROKEE CASSEROLE 
1 lb. ground beef
1 tbsp. olive oil
3/4 c. chopped onion
1 1/2 tsp. salt
1 tsp. pepper
1/8 tsp. garlic powder
1/8 tsp. thyme
1/2 bay leaf
1/8 tsp. oregano
2 c. tomatoes, (1 lb. can)
1 can cream of mushroom soup
1 c. Minute rice (1 c. cooked rice)
Mild Cheddar cheese to taste, shredded
Olive (optional)

Brown meat in oil and add onion. Stir in seasonings, tomatoes, soup, rice and optional chopped olives and simmer 5 minutes. Spoon in baking dish and decorate with Cheddar cheese and optional olives. Bake at 350 degrees for 30-45 minutes uncovered. Serves 4-6.
