PINWHEEL MEAT LOAF | |
2/3 c. long grain white rice 1 c. (4 oz.) shredded med. Cheddar cheese 2 tbsp. minced parsley 1 egg, beaten 1/2 c. milk 1/2 c. soft bread crumbs 2 tbsp. instant minced onion 1 1/2 tsp. seasoned salt 1/8 tsp. pepper 1 1/2 lbs. lean ground beef Prepare rice according to directions. Stir in cheese and parsley; set aside. Mix egg with milk, bread crumbs, onion, salt and pepper. Add beef and mix well. Turn meat mixture onto waxed paper and shape into a 10x12 inch rectangle. Evenly spread rice mixture over meat; press firmly, leaving 1 inch uncovered at each end. Roll meat up in a pinwheel, removing way paper. Place seam side down in shallow baking dish. Bake at 350 degrees for 40 to 50 minutes. Garnish with tomato catsup and grated cheese, if desired. Cut into thick slices and serve. Makes 8 servings. |
