MEXICAN MEAT LOAF | |
2 lbs. ground meat 1 chopped bell pepper 3 tbsp. chili powder 1/2 tbsp. salt (optional) 1 tbsp. garlic powder 1 onion (chopped) 1 can cream of chicken soup 1 can chicken with rice soup (drained) 1 (8 oz.) tomato sauce 1 (4 oz.) taco sauce 1 can Ro-Tel tomatoes (drained and chopped) Brown meat in skillet; add next 5 ingredients; saute until onions are clear. Add the soups; mix well. Add tomato and taco sauces and Ro- Tel tomatoes. Mix well. Line baking dish (8x12 or 9x13) with Nacho flavored Doritos. Cover with above mixture. Grate one block (8 ounce) Cheddar cheese and spread on top. Add chopped jalapeno peppers on top, if desired. Bake at 425 degrees F. for 20 minutes. |
