CARROT LOAF 
1 1/2 c. ground or shredded carrots
1 c. cold boiled rice
1/2 c. finely chopped peanuts or peanut butter

Mix above and add: 1 egg, slightly beaten 3 tbsp. finely chopped, cooked bacon Some onion or green pepper may be added

Bake in a greased loaf pan for 1 hour at 350 degrees.
