CARROT PINEAPPLE LOAF 
3 eggs
1 c. vegetable oil
1 1/2 c. sugar
2 c. shredded carrots
1 (8 oz.) can crushed pineapple, drained
1 c. chopped nuts or 1 c. shredded coconut
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground ginger
1/2 tsp. baking powder

Preheat oven to 350 degrees. Grease and flour 4 small baking pans. Mix flour, soda, salt, ginger and baking powder in large bowl and set aside. Mix eggs and oil with mixer until well blended. Add sugar and beat until thick (2 minutes). Beat in carrots and pineapple. (I like to add a little grated orange peel.) Add coconut and/or nuts. Mix into flour mixture and stir until moistened. Bake 50 minutes or until done.
