CARROT NUT LOAF 
1 1/2 c. all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
3/4 c. vegetable oil
2 eggs
1 c. sugar
1 c. grated carrots
1 c. chopped pecans

Combine first 4 ingredients in a small mixing bowl, set aside. Combine oil, eggs, and sugar in a large mixing bowl; beat at medium speed of electric mixer for 1 minute. Add dry ingredients; mix at low speed just until blended. Fold in carrots and pecans. (Batter will be stiff.) Spoon batter into greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pan; bake at 350 degrees for 1 hour and 25 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes in pan: remove to wire rack, and cool completely. Yield: 1 loaf.
