CARROT LOAF 
3 c. flour
2 c. sugar
1/2 tsp. salt
3 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
4 eggs
1 1/2 c. oil
2 or 3 grated carrots
Nuts or raisins (optional)

Mix sugar and oil and cream together, add eggs one at a time; mix together dry ingredients and add carrots. Grease and flour 2 loaf pans. Bake for 1 hour and 10 minutes approximately until toothpick inserted in center comes out dry.
