MIXED CAULIFLOWER SALAD 
1 sm. head cauliflower
2 oz. vinegar
4 oz. oil
1 tbsp. tarragon
1 tsp. salt
1/2 tsp. pepper
1 tbsp. sugar
1 red sweet pepper
4 oz. mushrooms
Onion

Soak cauliflower in cold salt water 15 minutes, drain, rinse, drain. Break or slice cauliflower in small pieces. Slice sweet pepper and mushrooms and onion thinly. Mix remaining ingredients together and pour over vegetables. Toss to coat vegetables. Refrigerate for 2-3 hours. Serve.
