PRUNE CAKE | |
1 c. cut-up, pitted, uncooked prunes 1 c. boiling water 2 c. sifted flour (not cake flour) 1 1/2 c. sugar 1 tsp. salt 1 1/4 tsp. baking soda 1/2 c. cooking salad oil (Mazola or Crisco oil) 1 tsp. cinnamon, nutmeg, cloves 3 eggs 1 c. chopped nuts or amt. desired Pour boiling water over prunes, let stand 2 hours. Heat oven to 350 degrees. Sift dry ingredients together. Add prune mixture and rest of ingredients. Blend thoroughly (1 minute). Beat 2 minutes at medium mixer speed. Pour into greased and floured 12 x 9 x 2 inch pan. Bake at 350 degrees about 35 minutes. "BUTTER" FROSTING: 4 tbsp. butter 2 c. confectioners' sugar 1 tsp. vanilla 3 tbsp. milk or cream (I use 1/2 & 1/2) Put first 3 ingredients in a deep bowl. Add almost all liquid. Blend with hand mixer adding rest of liquid until right consistency to spread. |
