CHEESY CATFISH 
2 lbs. catfish fillets
1/4 c. flour
1/2 c. Parmesan cheese
1 tsp. paprika
1/2 tsp. salt
1/2 tsp. pepper
1 tbsp. milk
1 egg, slightly beaten
1/4 c. butter, melted

Heat oven to 350 degrees; combine flour, cheese and seasonings. Dip fish in combined egg and milk; coat with cheese mixture. Place in baking dish. Pour butter over fish. Bake uncovered 30 minutes until golden brown. Yields: 4 servings.
