FRIED CATFISH 
1 c. milk
2 eggs
Salt and pepper
Tabasco
2 tbsp. mustard

Soak cleaned fish in a mixture like the above. Dip in cornmeal or a combination of flour and cornmeal. A commercial fish fry may be used. Fry in very hot oil until fish floats and is golden brown. Fish should be about the same size pieces. Do not overcrowd the oil or the fish will be greasy. Drain on paper towels. Keep warm in a 200 degree oven in a paper bag lined with paper towels.
