SIKUMA WWIKI - COLLARD GREENS | |
4 bundles greens 3 oz. onions or garlic 2 med. tomatoes, chopped 3 tbsp. butter 4 oz. whipped cream 1 tsp. to taste salt 1. Chop greens into small pieces and rinse thoroughly in cold water. 2. Chop onions and tomatoes. 3. Boil in large pot 4 cups water. 4. Add chopped greens to boiling water and cook 5 minutes. 5. Do not drain. 6. In large skillet brown onions in butter 3 minutes. 7. Pour green juice in bowl and save. 8. Add green and tomatoes in brown butter and fry for 5 minutes. 9. Add whipped cream and cook for another 10 minutes. 10. Add saved green juice to make souper. Serve with rice. Serves 4-6. Sikuma wiki means getting by until the end of the week. |
