SHRIMP FRIED RICE 
2 eggs
2 tbsp. water
3 c. cold cooked rice
3 tbsp. soy sauce
2 tbsp. oil
3 green onions
1/4 lb. cooked shrimp

Mix eggs and water; set aside. Heat oil in wok or skillet over medium heat. Add chopped green onions. Stir-fry 30 seconds. Add egg mixture and scramble. Stir in cold cooked rice separating grains. Add shrimp and soy sauce. Cook. Stirring until thoroughly heated. Yields: about 6 servings.
