SHRIMP FRIED RICE 
2 onions, sliced
2 tbsp. melted butter
6 slices bacon
2 eggs, beaten
1 c. cooked rice
1 (4 oz.) can sliced mushrooms, drained
1 (4 1/2 oz.) can shrimp, drained
1 (8 oz.) can water chestnuts, drained
1 tbsp. soy sauce

Saute onions in butter, set aside. Cook bacon until crisp, remove from pan and drain well. Crumble bacon and set aside.

Scramble eggs in bacon grease over low heat. Stir in rice, mushrooms and shrimp, chestnuts, soy sauce and onions. Sprinkle with bacon.
