MEATBALL SOUP | |
Heat approximately 1/2 gallon water, add some salt and soy sauce, and boil. Clean, dice and add to pot: 4 stalks celery with leaves 3 carrots 1 onion 2 potatoes 8 oz. can tomato sauce 1 can peeled tomatoes Basil, oregano, and thyme to taste To make meatballs crumble 6 to 10 saltine crackers and mix with 1/2 to 1 lb. hamburger. Season with paprika, lemon pepper, garlic, salt, pepper, or whatever you like. Mix and form into small balls dropping into boiling soup. You can also add frozen peas, green beans, corn, or mixed vegetables. Cook 30 minutes to 1 hour. Makes about 1 gallon of soup. |
