BEV'S HEARTY SOUP 
6 c. water
1 1/2 tsp. low sodium salt
1 1/2 c. Bev's Hearty Soup mix
2 carrots, sliced
1-2 stalks celery, sliced
1 1/2 c. shredded cabbage
2 (15 oz.) cans tomato sauce
1 (24 oz.) can salt-free vegetable juice
1 lb. leftover cooked lean meat, cut up or 1 lb. ground beef, browned and drained

Put water, salt, and soup mix into a large kettle. Bring to a boil. Cover and simmer for 1 1/2 hours. Add remaining ingredients and simmer until vegetables are done.
