EASY BAKE CHICKEN AND RICE 
1 c. rice
2 1/2 c. water
2 tbsp. butter
3 to 4 chicken breasts with skin
2 tbsp. powder chicken bouillon, not cubes
Garlic powder, parsley flakes and onion powder to taste

Combine water, butter, bouillon, parsley and onion powder in an oblong 1 1/2 to 2 quart baking dish. Microwave until butter melts (about 2 minutes). Add rice. Place chicken breasts on top, skin up. Sprinkle with salt and pepper. Cover. Bake at 375 degrees for 1 hour. Uncover and brown if desired under broiler.

Since microwave ovens vary in power, you may need to adjust your cooking time.
