CREOLE RATATOUILLE | |
2 tbsp. butter 1 1/2 c. sliced onion 2 c. fresh sliced okra or 1 lb. pkg. frozen okra 1 lg. ripe tomato, sliced 4 drops Tabasco 1/2 tsp. dried basil 1/4 tsp. chives 1/4 tsp. freshly ground black pepper 3/4 tsp. salt 1/4 tsp. sugar In a heavy skillet or saute pan melt the butter over low heat. Add the onion and cook until soft and beginning to brown. Add the sliced okra and cook, stirring frequently, for 10 minutes. Add the tomato slices and the remaining ingredients; mix thoroughly. Cook slowly, stirring frequently, for 5 minutes longer; then cover the skillet tightly, lower the heat and cook for 10 minutes. Serve very hot. Serves 4. |
