CHINESE CHICKEN SALAD 
1 lg. chicken breast
1 lg. cucumber
2 c. fresh bean sprouts
1 tbsp. roasted sesame seeds

DRESSING:

3 tbsp. soy sauce
2 tbsp. vinegar
2 tbsp. sesame seed oil
1/2 tbsp. prepared mustard
1/2 tbsp. sugar

Steam chicken breast 22 minutes. Chill. When completely cold - bone and skin and shred into size of bean sprouts. Wash and drain bean sprouts and chill. Peel cucumbers, cut crosswise into 2 1/2 inch sections (discard center) then cut into size of bean sprouts.

Toast sesame seeds (10 minutes). To serve make ring out of bean sprouts. Cover with cucumber, then chicken, then dressing. Garnish with toasted sesame seeds. Serve cold. Serves 4-6.
