CHINESE CHICKEN SALAD 
1 med. head lettuce
4 green onions
5 tbsp. soy sauce
1 tbsp. sugar
1 tbsp. honey
4 c. slivered cooked chicken or turkey
1/4 c. chopped parsley
4 oz. vermicelli or spaghetti
Oil for frying
1 c. chopped or slivered roasted blanched almonds

Rinse and drain lettuce well. Refrigerate. Cut onions in thin slivers, 2 inches long. Combine soy sauce, honey and salad oil, stirring until sugar dissolves. Mix with chicken. Shortly before serving, shred lettuce into large bowl. Add onions and parsley.

Cook vermicelli in boiling water for 3 minutes; drain well.
