APPLE STREUSEL MUFFINS | |
Streusel Topping (recipe follows) 1 1/2 c. sifted flour 1/4 c. sugar 2 tsp. baking powder 1/2 tsp. ground cinnamon 1/4 tsp. salt 1/8 tsp. ground nutmeg 1 c. shredded, pared apple 1/2 c. milk 1/4 c. vegetable oil 1 egg, beaten Prepare Streusel Topping; set aside. Into medium bowl, sift together flour, sugar, baking powder, cinnamon, salt and nutmeg. Stir in apple. In small bowl, mix together milk, oil and egg until blended. Add to dry ingredients; stir just until moistened. Spoon half the batter into 12 paper lined 2 1/2 inch muffin pan cups. Sprinkle with half the topping. Top with remaining batter and topping. Bake in 400 degree oven 20 to 25 minutes or until toothpick inserted in centers comes out clean. Makes 12 muffins. STREUSEL TOPPING: In small bowl, mix together: 1/3 c. packed brown sugar 2 tbsp. flour 1/2 tsp. ground cinnamon Cut in 2 tablespoons butter until crumbly. Stir in 1/3 cup chopped pecans. |
