2 lg. baking potatoes (about 1 lb.), peeled & cut lengthwise into 8 wedges 2 1/2 tsp. olive oil 1 tbsp. malt vinegar 1/4 tsp. salt (optional) Heat oven to 375 degrees. On a lightly greased baking sheet, spread potatoes in a single layer and brush lightly with 1 teaspoon of the olive oil. Bake, uncovered for 5 minutes. Brush with another teaspoon of the oil and bake for another 5 minutes. Brush one more time using the remaining 1/2 teaspoon of oil and continue baking another 15 minutes or until the potatoes are crisp and tender. before serving, sprinkle potatoes with vinegar and salt, if desired. |
